Ingredients
1 cup sugar
⅓ cup margarine, softened
2 eggs
1½ cups mashed ripe bananas (3–4 medium bananas)
⅓ cup water
1⅔ cups flour
1 tsp baking soda
½ tsp salt
¼ tsp baking powder
½ cup nuts or 1 cup chocolate chips
Directions
Heat oven to 350°F.
Grease only the bottom of an 8½ × 4½ × 2½-inch or 9 × 5 × 3-inch loaf pan.
Mix sugar and margarine in a large mixing bowl.
Stir in eggs one at a time until blended.
Add bananas and water and beat for 30 seconds.
Stir in the remaining ingredients, except the nuts or chocolate chips, just until moistened.
Stir in the nuts or chocolate chips.
Pour batter into the pan.
Bake an 8-inch loaf for 1 hour 15 minutes or a 9-inch loaf for 55–60 minutes, until a wooden pick inserted in the center comes out clean.
Cool for 5 minutes.
Loosen the sides of the loaf and remove it from the pan.
Finish cooling on a wire rack.
Cool completely before slicing.
