Chicken in Spicey Peanut Sauce

The Story Behind It

Lori Bird is the daughter of Bud and Delores Brooks. During Bud and Delores’s trip to Utah in 2006, Lori made this dish for them. It is a favorite of her three boys.

Ingredients

6 skinless chicken breast halves
2 Tbsp vegetable oil
3 tsp creamy or chunky peanut butter
⅔ cup water
2 spring onions, sliced
1 Tbsp chili powder

Directions

Heat the vegetable oil in a 10-inch skillet over medium heat.
Brown the chicken breasts on both sides and cook until done.
Remove the chicken from the skillet and drain off any fat or oil.
Add the soup, peanut butter, water, sliced onions and chili powder to the skillet.
Stir until smooth and heat to boiling.
Return the chicken to the skillet.
Reduce heat to low, cover and cook for 10–15 minutes, stirring occasionally, until the chicken is thoroughly cooked.
