A family memory

The Story Behind It

This recipe was at a family reunion when I was little, and I have loved the recipe ever since. However, I can’t remember exactly who gave us (Julina and I) the recipe (Darline Smith or Karen Skogen or another member of the Baker clan) but it is one of our favorite recipes growing up.

Ingredients

1 cup sugar
1 cup butter/shortening
½ cup corn syrup
4 cups oatmeal
Topping:
1 cup chocolate chips
¾ cup peanut butter

Directions

Mix sugar, butter or shortening, corn syrup and oatmeal together.
Press into a jelly-roll pan, leaving almost an inch from the sides. Batter will spread when baking.
Bake at 350 degrees.
Cool completely before adding topping.
Using the double-boiler method, melt the chocolate chips first and then add the peanut butter.
Once melted, spread upon cooled oatmeal mixture.
Refrigerate until ready to serve.
Cut into squares.
Refrigerate any remaining servings.
