Ingredients
¾ lb ground beef
¼ cup dry bread crumbs
½ tsp ground ginger
¼ cup soy sauce, divided
1 medium onion, sliced
1 (20 oz) can pineapple chunks, drained
1½ cups beef broth
2½ Tbsp cornstarch
¼ cup water
Directions
Combine the ground beef, bread crumbs, ginger and 2 tablespoons soy sauce in a large bowl.
Mix until well blended.
Shape rounded tablespoonfuls into 1¼-inch meatballs.
Brown the meatballs in a large skillet, shaking the skillet frequently so they brown evenly and retain their shape.
Push the meatballs to one side of the skillet.
Add the sliced onion and sauté for 5 minutes.
Add the pineapple chunks and beef broth.
Cover and cook for 5 minutes.
Meanwhile, combine the cornstarch, water and remaining 2 tablespoons soy sauce.
Add the cornstarch mixture to the skillet.
Stir over medium heat until the sauce thickens.
