Pioneer Gingerbread

The Story Behind It

My Mom, Sue Smith Mataczynski, wrote many of her favorite recipes into notebooks and added comments to some. This one was marked very good.

Ingredients

½ cup sugar
½ cup shortening
1 egg
1 cup honey
2½ cups flour
½ tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp ginger
½ tsp cloves
1 cup boiling water

Directions

Cream sugar and shortening together.
Beat in egg and honey.
Sift together flour, salt, baking soda, baking powder, cinnamon, ginger and cloves.
Add the honey mixture alternately to the dry ingredients with the boiling water.
Bake for 20 minutes in a 375-degree oven.
Reduce heat to 350 degrees and bake 10–15 minutes more.
The secret is to open the oven door occasionally, causing the gingerbread to fall and producing a chewy brownie texture.
