Rhubarb Crumble

The Story Behind It

My niece, Debra Henry Cruz, requested this recipe. She has fond memories of eating this dessert when she visited Aunt Dot and Uncle Ronald.

Ingredients

¾ cup oatmeal
1 cup flour
¼ cup brown sugar
¼ cup white sugar
½ tsp baking soda
¼ tsp salt
1 tsp vanilla
½ cup shortening
3 cups chopped rhubarb
¾ cup white sugar

Directions

Combine oatmeal, flour, brown sugar, ¼ cup white sugar, baking soda, salt, vanilla and shortening until crumbly.
Pack a thin layer of the crumb mixture into the bottom of an 8- or 9-inch cake pan.
Add chopped rhubarb and sprinkle with ¾ cup white sugar.
Cover with the remaining crumb mixture.
Bake at 375 degrees for 40 minutes.
