Rhubarb Rumble

The Story Behind It

I have used cooked pudding when I bought the wrong kind. Also have added 2 tablespoons of Splenda as I thought it was a bit too tart. If you are not concerned about sugar content, use regular Jell-O and pudding. This is also good just as a pudding; skip the crust.

Ingredients

3 cups chopped rhubarb
1 (3 oz) package sugar-free Jell-O
1 ½ cups cold skim milk
1 (1 oz) package instant sugar-free vanilla pudding mix
1 reduced-fat graham cracker crust (8-inch)

Directions

Microwave rhubarb, covered, on high power for 6–8 minutes or until soft, stirring every 2 minutes.
Stir in Jell-O until dissolved.
Cool completely.
In a separate bowl, combine milk and pudding and beat on low speed for 2 minutes.
Fold into rhubarb mixture.
Spoon into crust.
Cover and refrigerate until firm.
