Swiss Steak

The Story Behind It

This was always a favorite when we raised our own beef and had to feed workers who helped harvest crops.

Ingredients

1 Tbsp dry mustard
1½ tsp salt
¼ tsp pepper
½ cup flour
3 Tbsp frying fat
2½–3 lbs round steak, 1½ inches thick
1½ cups sliced onions
2 carrots, diced
2 Tbsp Worcestershire sauce
2 tsp brown sugar
2 cups canned tomatoes

Directions

Preheat oven to 325°F.
Combine the dry mustard, salt, pepper and flour.
Dredge the round steak in the flour mixture.
Brown the steak well in the frying fat.
Transfer the steak to a roasting pan.
Top with the sliced onions, diced carrots, Worcestershire sauce, brown sugar and canned tomatoes.
Cover and bake for 1½–2 hours.
