Turkey Meatloaf

Ingredients

1½ cups finely chopped onion
1 Tbsp minced garlic
1 tsp olive oil
1 medium carrot, finely diced or shredded
¾ lb cremini mushrooms, trimmed and finely chopped
1 tsp salt, divided
½ tsp black pepper, divided
1½ tsp Worcestershire sauce
⅓ cup finely chopped fresh parsley
¼ cup plus 1 Tbsp ketchup, divided
1 cup fine fresh bread crumbs
⅓ cup 1% milk
1 large egg, lightly beaten
1 large egg white, lightly beaten
1¼ lbs ground turkey, a mixture of dark and light meat
3 bacon slices, cut in half (optional)

¾ lb cremini mushrooms, trimmed and finely chopped
1 tsp salt, divided
½ tsp black pepper, divided
1½ tsp Worcestershire sauce
⅓ cup finely chopped fresh parsley
¼ cup plus 1 Tbsp ketchup, divided
1 cup fine fresh bread crumbs
⅓ cup 1% milk
1 large egg, lightly beaten
1 large egg white, lightly beaten
1¼ lbs ground turkey, a mixture of dark and light meat
3 bacon slices, cut in half (optional)

Family Notes

Active time is approximately 30 minutes, and total preparation and cooking time is approximately 1½ hours. The original recipe suggests using up to 1 pound of mushrooms and replacing half or more of the cremini mushrooms with chanterelles. Dry plain bread crumbs may be substituted for fresh bread crumbs.
