White Fruit Cake

The Story Behind It

Mom would make this cake each year for my birthday, December 20, as it was my favorite.

Ingredients

1 cup butter
2 cups white sugar
3½ cups flour
1½ cups sweet milk
5 egg whites
1 tsp salt
3 tsp baking powder
2 lbs raisins
1 cup coconut
1 cup blanched almonds
½ cup candied fruit

Directions

Cream butter and sugar together.
Add milk and flour alternately.
Sift salt and baking powder with the flour.
Combine raisins, coconut, blanched almonds and candied fruit.
Add the fruit and nut mixture to the batter.
Fold in beaten egg whites last.
Divide among four loaf pans, or use a Bundt pan or angel food cake pan.
Bake at 275°F for 1 hour.

Family Notes

Kathie’s mother omitted the raisins because Kathie did not like them. She sometimes used a Bundt pan or angel food cake pan instead of loaf pans.
